Ingredients
- 1 roll of fresh puff pastry
- 200 g chicken fillet
- 1 bell pepper
- 1 zucchini
- 1 red onion
- 100 g crème fraîche
- 1 tsp paprika powder
- 1 tsp thyme
- 1 tsp garlic powder
- 75 g grated cheese
- pinch of salt and pepper
- possibly a handful of arugula
Preparation method
- Preheat the oven to 200 degrees.
- Line a baking tray with baking paper.
- Roll out the puff pastry on the baking sheet and prick holes in the dough with a fork.
- Cut the chicken fillet into pieces and season with salt, pepper, garlic powder and paprika powder.
- Cut the courgette into slices, the pepper into strips and the red onion into half rings.
- Pour a dash of oil into a frying pan. Fry the chicken fillet until done.
- Add the peppers, courgette and red onion until slightly softened. Season with thyme and a pinch of salt and pepper.
- Spread a thin layer of crème fraîche on the puff pastry. Divide the fried chicken and vegetables over it and sprinkle with grated cheese.
- Bake the sheet cake in the oven for another 12-15 minutes until the pastry is golden brown and crispy. Remove from the oven and garnish with some rocket if desired.
Tip(s)
- Replace the chicken with feta and olives. Add sun-dried tomatoes and a pinch of oregano for extra flavour.
- Do you like it spicy? Sprinkle the chicken with paprika and chili flakes or add jalapeño.
Storage and reheating
This sheet cake is also perfect to make in advance. Keep leftovers in the fridge and warm them up in the oven or airfryer. This way the puff pastry stays nice and crispy!
