Traybakes are ideal for processing a large amount of vegetables in a dish. This Brussels sprouts traybake with sweet potato, broccoli and red onion is perfect for autumn and winter and can also easily be made as a meal prep recipe! It is a matter of throwing everything on the baking sheet and in the meantime making a nice dressing and at the table!

Ingredients
For 4 people
For the traybake:
- 750 g sweet potatoes (cut into pieces)
- 300 g Brussels sprouts (cleaned and possibly halved)
- 2Â red onions (in wedges)
- 1 broccoli (in florets) or try Bonduelle Broccoli Florets
- 1Â can of lima beans
- 200 g smoked tofu (torn into pieces)
- 2 tablespoons mild olive oil
- 1 teaspoon smoked paprika powder
- 1 tablespoon Italian herbs
- Salt and pepper to taste
- fresh parsley or coriander (for garnish)
For the sauce:
- 2 tablespoons tahini
- 1 teaspoon Dijon mustard
- 1 teaspoon garlic powder
- 3 tablespoons extra virgin olive oil
Preparation
- Preheat the oven to 180°C. Line a large baking sheet with baking paper.
- In a large bowl, combine sweet potatoes, Brussels sprouts, red onion, broccoli, and shredded smoked tofu. Add olive oil, smoked paprika, Italian seasoning, salt, and pepper. Toss well to coat evenly.
- Spread the mixture in a single layer on the baking sheet. Bake in the oven for 20-25 minutes.
- Remove the baking sheet from the oven and add the lima beans and tofu chunks. Toss everything together briefly and return the baking sheet to the oven for another 15-20 minutes, until the vegetables are golden brown and cooked through and the lima beans and tofu are crispy.
- While the traybake is in the oven, make the sauce. In a bowl, whisk together the tahini, mustard, garlic powder, olive oil and a dash of water until smooth. Taste and season with salt and pepper. Add more water if necessary to thin the sauce.
- Remove the traybake from the oven and divide it over plates. Sprinkle generously with the creamy sauce and serve immediately.
