This is an easy basic recipe for homemade egg salad, nice and fresh and light in taste and delicious on bread or toast.

Ingredients
For 1 little bowl
- 4 eggs
- 1 teaspoon mustard
- 2 tablespoons Greek yogurt
- 1 small shallot
- pinch of paprika powder
- Pinch of curry powder
- 1 tablespoon chives
- salt and pepper
Preparation
- Boil the eggs hard for about 8-10 minutes. Shock the eggs with cold water and then peel the eggs. Cut the cooled eggs into small pieces.
- Chop the shallot as finely as possible and place in a bowl. Then add the yoghurt and mustard. Season with a pinch of paprika powder, a pinch of curry powder and salt and pepper and mix well. Add the pieces of egg and mix well again. Chop the chives finely and add this.
- Tip: you can also add mayonnaise to this egg salad, but that will make it a bit less healthy and fattier.
