I always find casseroles ideal, especially on busy days. They are easy to prepare and wonderfully warming. This spinach casserole is creamy, nutritious and perfect as comfort food.

Ingredients
For 4 people
- 800 gr potatoes
- 450 g spinach (frozen leaves)
- 1 outing
- 150 g cream cheese with herbs
- 100 g grated cheese
- 2 eggs
- 50 ml milk
- 1 tablespoon olive oil
- 30 g butter
- 1 pinch of nutmeg
- 1 pinch of salt and pepper
Preparation
- Peel the potatoes and boil them in a pan of salted water until soft. Drain the potatoes and mash them with the butter and milk until smooth. Add a pinch of nutmeg, salt and pepper and stir well. Set aside.
- Preheat the oven to 200 degrees. Finely chop the onion. Heat the olive oil in a pan and fry the onion until it is translucent. Add the frozen spinach in parts and let it thaw while stirring. Season with salt and pepper.
- Stir the cream cheese into the spinach while the pan is off the heat. Let the mixture cool slightly and then mix in the eggs.
- Lightly grease a baking dish. Spread half of the mashed potatoes over the bottom of the dish and smooth it out. Spoon the spinach mixture evenly on top. Spread the rest of the mashed potatoes over this and smooth it out as well. Sprinkle the grated cheese over the top.
- Bake the spinach dish in the middle of the oven for 25-30 minutes until golden brown. Let it cool slightly before serving.
- Tips: You can store leftovers of the spinach casserole in the fridge for up to two days. Reheat in the oven or microwave.
- If you don’t have any cream cheese with herbs in the house, you can also use natural cream cheese and add some extra herbs such as chives or parsley. I often make this dish on days when I have some leftover spinach in the freezer. Ideal to prevent waste!
